This most recent rendition of a winter salad loosely merges ideas from a French salad nicoise (but no potatoes, tuna, or anchovies please) and a Greek salad (with no oregano or grape leaves please).
Farinata is a street food in Tuscany made out of chickpea flour, which is a source of protein for vegetarians and vegans, and has the additional advantage of being gluten free.
