We have been “sheltering in place” now for 23 days. Last Saturday we grocery shopped– see our refrigerator above– replenishing our food for the next two weeks. In this post below, you can see photos of what we’ve been eating, with corresponding recipe links (in order) for all of those photos except the last eight:
Fabulous Seafood Chowder Recipe
Zucchini Noodle Tuna Casserole
Quick Broiled Eggplant Parmesan
Curried Tuna Salad with Apples and Raisins
Kale Salad with Pear and Pine Nuts
Artichoke, Zucchini, and Caramelized Onion Frittata
Salsa Verde Tilapia Enchiladas
Zucchini Noodles with Clam Sauce
I hope you are taking good care of yourself and that this gives you some good ideas of nourishing things to make during this time at home.
