I am glad I follow Molly Katzen on Twitter because recipe gems like this one surface. This couldn’t be easier and couldn’t taste better!
Blueberry Corn Salad
1 cup fresh blueberries
Kernels from 2 or 3 ears of very sweet corn (cooked and cut off the ear)
2 cups minced baby arugula
2 tablespoons olive oil
3 tablespoons lime juice
Toss gently and enjoy it greatly!
