Whenever I cook salmon, I make extra to have leftovers for this delicious, light, quick meal. This amount makes three patties, because that’s how many I’m cooking for these days.
My Best Salmon Cake Recipe
2 cups of cooked salmon, flaked
1 tablespoon mayonnaise
1 teaspoon mustard
a small handful of fresh parsley, chopped
a small handful of fresh dill, chopped
1 egg
1 tablespoon olive oil
Mix all ingredients together except the egg and olive oil. Shape into 3 round patties. Beat the egg and spread each side of the cakes with it (I use my fingers, but if you want to avoid the goo use a brush.) Heat one tablespoon of olive oil in a frying pan and fry the cakes for about 3 minutes on each side until crispy. Good served with salad, veggies, or fruit.
