Recipe: Easy Mexican Tilapia Bake

This is a quick and delicious meal I make in busy moments. The recipe is of my own devising: it evolved from what I had on hand that went well together. Originally simply a hasty option, we now look forward to this satisfying treat! Give it a try…

Mexican Fish Bake

2 tilapia loins, thawed
1/2 jar of your favorite salsa
1/2 can of black beans, drained
3/4 cup shredded Mexican blend cheese
1 tablespoon fresh cilantro (optional)
1 ripe avocado and sour cream for serving on the side

Preheat oven to 350˚ F.
Pour the salsa in the bottom of a square Pyrex dish.
Put the tilapia in the dish, turning the fish to get a bit of salsa on both sides.
Pour the beans on top of the fish, followed by a top layer of cheese.
Put in the oven for 30 minutes.

Garnish with cilantro (if you have it.)

Serve with avocado slices and sour cream.
