Recipe: Baked Eggs Over Power Greens

This is surprisingly satisfying and has amazing staying power. We really like it!

Baked Eggs with Power Greens Recipe

Butter for greasing baking dish
2 tablespoons of olive oil
1 cup chopped red onions
5 oz washed power greens (we usually use Trader Joe’s package shown below but also have used chopped chard leaves from the garden)
2 eggs
1/2 cup crumbled goat cheese

Preheat oven to 350˚F. Set a rack in the lower third of the oven. Butter baking dish.

Heat olive oil in a pan and add the onions. Caramelize onions for 10-15 minutes, being careful not to let them burn.

Mix the onions with the greens and place in baking dish. Break the eggs so they sit on top of the onion/greens mixture (see photo.)

Bake in oven for ten or more minutes until eggs start to go opaque (cooking time will depend on the size of your egg; our huge farm fresh ones often take much longer than ten minutes). Remove dish from the oven, and preheat broiler. Scatter the goat cheese on top and put under the broiler until the cheese is bubbling.

Use a spatula to scoop one egg plus greens onto each plate: it serves two perfectly. (You can also halve this recipe and make a single serving in a small ramekin if you prefer…)
