Ideas for Processing Fresh Tomatoes

It’s that time of year again, and we are busy over here processing tomatoes. The ones above were the first in from our garden. Now they are coming thick and fast. Below are our favorite recipes for utilizing these beauties.

We make and freeze lots of both the Slow Roasted Tomatoes and the Roasted Tomato Sauce for use all year, and we quarter and freeze fresh tomatoes in three pound amounts in ziplock bags ready to make that fresh Tomato Soup all year too. (There is nothing like zings of fabulous heirloom tomato flavor all winter long!) Meanwhile, we love eating Tomato Tarts fresh off the vine, and with the green tomatoes left at the last freeze each year, my husband makes his family’s Green Tomato Relish (otherwise known as Chow Chow).
