Harvesting the last of this year’s cilantro from the garden, we made a double batch of this wonderful dressing, which is healthy and light with a yogurt base, while jazzy with garlic. It is is really easy to whip up, so give it a try on salad or shrimp.
1 cup cilantro leaves
1/2 cup Greek Yogurt
2 Tablespoons lime juice
2-3 cloves garlic
1/4 cup olive oil
1 1/2 teaspoons white wine vinegar
1/8 teaspoon salt
Put all the ingredients in a food processor or blender and whir until completely blended.
