Two Great Cookbooks: Plenty & Plenty More

These two cookbooks are wonderful and I give them five stars. I am sad they are due back at the library and I have to return them! However, I’ve made notes of what I want to try in the future from these excellent vegetarian cookbooks: sweet potato cakes, leek fritters, caramelized garlic tart, lentils with broiled eggplant, caramelized fennel with goat cheese, sweet corn with eggplant sauce, raw beet and herb salad, cauliflower/grape/cheddar salad, red onions with walnut salsa, eggplant cheesecake, peppers stuffed with rutabaga… you get the idea.

Both books are equally terrific. The first one, Plenty is organized by type of vegetable, and the second one, Plenty More, is organized by cooking method (tossed steamed, blanched, simmered, braised, grilled, roasted, fried, mashed, cracked, baked, and sweetened.) You can see photos below of pages from both.

These would make great gifts to the vegetarians you know, or check them out for yourself. I’m grateful my local library is enlightened enough to have them; I’ll be making use of them! Yum!
