Recipe: Thyme and Garlic Roasted Shrimp

This is a very easy and useful dish to have in your back pocket because it is both quick and delicious.  We are partial to the shrimp from Argentina sold by Trader Joe’s as they have much better flavor and texture than other varieties.

Thyme and Garlic Roasted Shrimp

2 tablespoons olive oil
10-12 sprigs of thyme
3 garlic cloves, quartered
2 pounds of shrimp (30/pound) thawed, peeled, and deveined
2 tablespoons of white wine vinegar
1/2 teaspoon of salt
1/2 teaspoon of pepper

Pour the olive oil into a 9×13 baking dish. Add the thyme sprigs and garlic. Set the dish in the oven and then preheat the oven to 450 degrees for 15 minutes.

Add the shrimp and stir it up a bit. Return the pan to the oven and roast them until pink and firm, about 8 minutes, tossing gently a few times with a wooden spoon.

Remove from oven and stir in the vinegar, salt and pepper.

Serve with a slotted spoon. Enjoy!
