This is a simple, easy meal that satisfies.
Onion Frittata Recipe
8 large eggs
salt and pepper
1 Tablespoon butter
1 teaspoon of vinegar
1 medium onion, (1 cup) chopped
1 clove garlic, finely grated
1/2 cup Gruyere cheese
2 Tablespoons chives, minced
Preheat the oven to 375ºF with the rack in the upper middle position.
In a large bowl beat the eggs with 3/4 teaspoon of salt and 1/2 teaspoon of pepper.
In a cast iron (or oven safe) skillet over medium-low melt 1 Tablespoon of butter. Add the onion and 1/2 teaspoon of salt, and cover, cooking and stirring occasionally until soft and moisture is released (about 5 minutes). Uncover and increase the heat to medium-high, and cook, stirring, until well browned, about 10 minutes. Stir in the garlic and 1 teaspoon of vinegar. Cook until the vinegar has evaporated (less than a minute).
Pour the eggs into the skillet and cook, using a silicone spatula to pull the eggs from the edges toward the center, until the eggs begin to set (about a minute). Transfer the skillet to the oven and bake until just set, 3-5 minutes. Remove from the oven and sprinkle with the Gruyere cheese. Return to the oven and bake until the cheese has melted, about a minute.
Sprinkle with the chives, and serve hot.
