We’ve used this as a side dish and also as dessert. Roasting it in the oven gets it caramelized on the outside, and juicier and sweeter on this inside. Some people add a 1/2 teaspoon of cayenne to give it a kick, or serve it for dessert with some maple sugar or ice cream. I like it best by itself like this.
Oven Roasted Pineapple Recipe
1 Tablespoons sugar
2 teaspoons ground cinnamon
1 teaspoon avocado oil
1 whole pineapple, peeled
Preheat the oven to 350ºF.
Mix the sugar and cinnamon together in a small bowl.
In a sauté pan over medium heat, add the oil. When hot add the pineapple. Turn the pineapple so it cooks on all sides, sprinkling with the cinnamon/sugar mixture as you go.
When the pineapple is golden, place it on a baking sheet, and then in the oven. Bake for 20 minutes.
Serve warm or a room temperature.
