Broccoli with Pralined Pistachios and Tahini Dressing (Recipe)

My husband likes steamed broccoli but I think it needs a little help. This dish we both liked, and you might was well. It is really easy and comes together quickly. I buy pistachios already shelled from Costco, and they are dreamy roasted with a little maple syrup and salt. I like the texture they add to the broccoli.

Recipe: Broccoli with Pralined Pistachios and Tahini Dressing

Preheat oven to 400ºF.

1 large bunch of broccoli, chopped into florets

for the nuts:

1/2 cup shelled pistachios
1 tablespoon maple syrup
sea salt and freshly ground pepper

for the dressing:

2 tablespoons of tahini
1 lemon, juiced
2 teaspoons maple syrup
1 Tablespoon olive oil
sea salt and freshly ground pepper

Toss the nuts with the maple syrup and season with ample salt and pepper. Place the nuts on a piece of parchment paper on a cookie sheet, and put them in the oven for about 8 minutes, until deliciously fragrant. Take them out and let cool a couple minutes while you steam the broccoli until it is bright green. Meanwhile whisk the dressing together.

Place the steamed broccoli on a platter, drizzle with the dressing, and sprinkle on the pistachios. This recipe serves two as shown below, or four if you have more than one side dish.
