Today the snow finally melted enough to scrape off the top of the cold frame and peer inside, and to our surprise arugula, spinach, radishes and cabbages are blithely continuing to grow looking no worse for the lack of light and the record low temperatures!
This is completely easy, very quick, and always moist and delicious. It is one of my recipes that people (my daughter in California, my sister in Ohio, etc) frequently tell me has become a staple in their homes too, after I shared it with them. I’m sorry I haven’t gotten it onto the blog until now!

I’ve been wanting to try coconut flour (readily available at Trader Joe’s) and these muffins were a delicious start. They are remarkably good and you’d never know they are wheat free. If you try these for your gluten-free friends, you’ll find you make them next time for yourself!

We made this appetizer for a lovely dinner party we went to this evening. It was a perfect choice for such a cold, rainy night, and everyone liked it.
