A tian is a classic Provençal baked vegetable casserole usually with zucchini, summer squash or tomato (like this yummy one here), so to do it with two types of potatoes is a lovely twist.
This recipe would be simple to resize for however many people you are feeding.
I served it on a smear of hummus.
Easy Cranberry Potato Tian Recipe
2 sweet potatoes, thinly sliced
2 Yukon gold potatoes, thinly sliced
2 Tablespoons of good olive oil
1/4 unsweetened dried cranberries
2 teaspoons fresh rosemary leaves, chopped
2 teaspoons fresh thyme, chopped
Salt and pepper
Preheat oven to 400ºF. Lightly oil a baking dish that will tightly hold your potatoes.
Arrange the potato and sweet potato slices, alternating them upright in tight rows.
Drizzle with olive oil, scatter cranberries, rosemary, thyme, slat and pepper.
Cover and bake 45 minutes.
Uncover and continue to bake 20 more minutes.
Serve immediately.
Yum! Enjoy!
