A new friend, Zina, who I met walking in Huntington State Park, and who is also a fellow blog reader of yours, invited me to lunch last Friday. Food being one of the things we have in common, she fixed me a wonderful lunch, the whole spread of which you can see in the photo below. Everything was terrific and right up my alley: salad, with wild salmon and hummus. What blew me away was the sumptuous green dressing! Wow. It was out of this world, fabulously good.
When I begged for the recipe, it turns out that the dressing has been the most viral recipe on Tik Tok this summer. You can check out the original clip here, which as of now, has 1.8 million views. But I’m now telling you, and after you try it, you’ll tell someone else…
This recipe is by Baked by Melissa, and you can see the original here on her website. She puts it on a salad of: 1 chopped cabbage, 1 chopped cucumber, 1/4 cup chives, and 1 bunch of chopped scallions, but don’t feel limited by that! This amazing stuff would go great on almost anything!
Tik Tok Green Goddess Dressing
1 cup basil leaves
1 cup fresh spinach
2 cloves garlic
1 small shallot
2 lemons, juiced
1/4 cup olive oil
1/4 cup raw, unsalted cashews and walnuts
1/3 cup nutritional yeast
1 teaspoon salt
2 tablespoons rice vinegar
Any extra chives you have on hand (optional)
Place all ingredients in a high speed blender and whirl until smooth.
Mix it in your salad, put it on your protein, or use it as dip.
Taste it and groan with satisfaction.
