Recipe: Watercress, Pear and Walnut Salad

In the winter a watercress salad is a real treat. I like it this way, with ripe pear and toasted walnuts…

Watercress Pear Salad with Toasted Walnuts

2 large bunches of watercress
1 succulently ripe pear, sliced
1/2 cup walnuts, toasted and chopped

Walnut Oil Dressing:

1 tsp Dijon mustard
1 tsp honey or agave
zest & juice of 1 small lemon
6 tablespoons walnut oil
sea salt and freshly ground pepper

Whisk together the dressing and drizzle on the watercress, pear slices and walnuts.

Enjoy!
