Curried Tuna Recipe with Apples and Raisins

Recipe: Curried Tuna with Apples and Raisins

This is a delicious, easy alternative to traditional tuna salad.

Serve it on a bed of greens, if desired. I usually add a pea shoot or micro-green garnish, as shown in the photos.

This can be made in advance and refrigerated, or tastes just as good as leftovers.

Curried Tuna with Apples and Raisins:

2 cans water packed albacore tuna, drained and flaked apart
1/4 cup good mayonnaise
1 small apple, cored, peeled, and diced
3 carrots, peeled and grated
1/4 cup raisins
3 scallions, thinly sliced
2 teaspoons curry powder
2 Tablespoons freshly squeezed lime juice
1/4 teaspoon salt
a couple grinds of fresh pepper

Mix all ingredients together in a mixing bowl.

Serves 4.
