Seasonal Chop Chop (Recipe)

This is barely a recipe, merely something we like and often do. It is simple and delicious with fresh, seasonal veggies. We grow most of these ingredients in abundance, so need to use them up in an easy, satisfying way.This has been a staple of ours this time of year ever since around 1998.  The ingredients are generally available all year long, so don’t need to be from your garden, that is just how I think about it .

Seasonal Chop Chop Recipe

1 cucumber, de-seeded and chopped
1 red bell pepper, de-seeded and chopped
1 yellow bell pepper, de-seeded and chopped
2 Tablespoons red onion, diced
two handfuls cherry or grape tomatoes, halved
1 avocado, de-seeded and chopped (optional)
1 Tablespoon lemon juice
1 Tablespoon olive oil
1 pinch salt

Whisk the last three ingredients together as a minimalistic salad dressing.

Put all the other ingredients in a bowl. Add the dressing and toss.

Best fresh, but leftovers survive well too.
