    Even a bite of The Best Zucchini Bread in the world may be saying the ALL of it!

    Preheat oven to 350. Butter two loaf pans.
    Grate two large zucchinis to make 3 cups.
    Whisk 4 eggs. Add 2 cups white sugar, ½ cup packed light brown sugar, 1 cup unsweetened applesauce, 2/3 cup vegetable oil, 2 teaspoons Vanilla. Add the grated zucchini to this.
    In another bowl, mix 3 cups all-purpose flour,
    1 tsp. baking powder, 1 tsp. baking soda, 1 tsp. salt,
    1 tsp. Cinnamon. Add this to the above mixture, but don’t over-mix.
    Add 1 cup chopped roasted walnuts,
    1 cup Raisins.
    Pour mixture into the prepared pans. Bake 55 minutes or until a toothpick inserted into center comes out clean. (Bread should “bounce back” when touched.)
    Cool in the pan for at least 10 minutes. Put a plate over and insert onto a wire cooling rack to cool completely before slicing.
    Store in frig. Keeps well! Reheat to eat. YUM!!!!
