We love this dressing, and it is worth getting over being squeamish about those anchovies in order to make it. That is the secret ingredient that makes this so very good!
First I make my own mayonnaise which I prefer over store brands:
Avocado Mayo Recipe:
1 1/2 cups avocado oil
2 eggs
1/4 teaspoon of salt
1/4 teaspoon pepper
1/2 teaspoon dry mustard
juice of 1 lemon
Mix in a food processor or with an immersion blender. Refrigerate.
Creamy Herb Dressing Recipe:
3 oil packed anchovy filets
4 garlic cloves, chopped fine
1 cup homemade avocado mayo (recipe above)
2 large handfuls of fresh basil leaves
4 Tablespoons of fresh tarragon leaves
1/4 cup fresh parsley leaves
3 Tablespoons lemon juice
2 Tablespoons red wine vinegar
2 large pinches of salt
Blend all ingredients together in a food processor. Refrigerate when not in use.
Enjoy on salads, on protein, on veggies, in sandwiches, wraps, or even in omelets.
