Asian Sesame Sauce for Frozen Spiralized Carrots

These spiralized carrot “noodles” are available frozen at Trader Joes at low cost, and this is the perfect sauce to put on them. They are so good, we will be having these often as an easy, quick side dish, that really delivers pleasure as well as nutrition. This makes three or four side dish servings.

Asian Sesame Sauce Recipe

2 Tablespoons tahini
2 Tablespoons coconut aminos
2 Tablespoons water
1 Tablespoon unsweetened almond butter
1 Tablespoon rice vinegar
1 teaspoon toasted sesame oil
1/2 teaspoon ground ginger
1/4 teaspoon red pepper flakes
1 clove garlic
(for one box Trader Joes Carrot Noodles shown below)

Put all of the the sauce ingredients in a food processor and puree until smooth.

Cook the carrot noodles– frozen right out of the box– with a little bit of oil over medium heat. Cover for about 2 minutes, and then flip and cook the other side of the now semi-frozen block, and cook covered again, about two minutes more. With tongs gently loosen and cook the carrots covered with a lid (stirring gently occasionally) for another four minutes. Add sauce and stir carrots gently to distribute it evenly.

Serve immediately, and enjoy!
