I have other biscuits on this site, but we’ve been making these, since they are easier than the rest, more reliable, and absolutely delicious too! No fussing around with refrigerator times or specialty ingredients. This is your purely perfect, simple, no-skill required, straight-forward, always welcome, everyday but company worthy biscuit, especially delightful when eaten with our easy homemade jam (our recipe here).
Flaky biscuit Recipe
2 cups flour
2 tsp. Baking powder
½ tsp. baking soda
1 tsp. salt
½ cup frozen butter, grated
1 cup + 1 to 2 tablespoons buttermilk
Preheat oven to 425º F
Mix all dry ingredients. Add grated, frozen butter (you can also just mix all the dry ingredients in a food processor, then cut the butter in small cubes and pulse a few times until there are little lumps of butter about the size of small peas).
Add the buttermilk and stir until just combined.
Dump mixture onto a floured surface and with floured hands, gently press the dough into a circle about an inch thick. Fold over half of the dough on top of the other half and flatten gently again. Repeat this process 2 more times.
Press the dough gently until it is about ½ to ¾ inches thick. Cut with a biscuit cutter with swift downward motions. Do not rotate the biscuit cutter. Take scraps of dough and rework gently until the parts are combined. Press to the same thickness as before and cut a few more biscuits. Repeat this process if needed until you have as many biscuits as are possible.
Place uncooked biscuits on a baking sheet lined with parchment paper. Bake at 425º F for 13-15 minutes.
