Broccoli and cucumbers are two things that we should eat lots of and this recipe is a step toward doing that.
This salad is easy to make, lots of crunch and texture, and the dressing is delicious.
Leftovers last well in the fridge (see last photo), and you can also make it feel fresh and welcome with different toppings.
Broccoli Cucumber Salad Recipe
For salad:
2 English cucumbers, chopped
2 cups of broccoli tops, chopped
1/3 cup pistachios
1/4 cup of cilantro, chopped
2 green onions, chopped
For the dressing:
6oz Greek yogurt or skyr
1 Tablespoon peanut butter
2 Tablespoon Water
1 teaspoon of sriracha
1 Tablespoon of rice vinegar
Juice of 1 lime
1/2 teaspoon salt
1 teaspoon Dijon mustard
Additional Optional Toppings:
blueberries
avocado
shake of everything but the bagel seasoning
Chop up the salad, whirl together the dressing, toss the dressing into the salad, add the toppings you prefer, and enjoy!
