This is an easier version than the more complicated banana nut muffin recipe that is already on this blog (see here). These are also delicious, and they use honey rather than sugar, however this recipe has no veggies in them. Both are grain free, so great for your gluten free friends.
These are especially light, which is why we like them so much.
Easy Banana Nut Muffin Recipe
3 ripe bananas, mashed
2 organic eggs
2 Tablespoons butter, softened
4 Tablespoons honey
2 teaspoons organic vanilla extract
1 cup almond flour (or a little more)
1.5 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon sea salt
1 teaspoon cinnamon
1/2 cup walnuts, chopped
1/4 cup raisins (or more)
Preheat oven to 350ºF
Mash the bananas.
Mix in the eggs, honey, butter and vanilla.
Add in the dry ingredients, adding in a little more almond flour if it is too runny (some eggs are larger than others).
Pour into a greased muffin tin and bake 15-20 minutes, until cooked through. They should be slightly brown on top and a toothpick inserted in the middle of a muffin should come out clean.
Let them cool slightly before gently removing them from the pan (they can initially be quite delicate).
These are great either warm, at room temperature, or toasted in butter.
