Recipe: Crab Salad

This is delicious, perfect for a romantic lunch with your sweetheart on a sultry hot day. It’s the first recipe I’ve actually made out of my new cookbook (see here).
Best Crab Salad recipe
1/3 cup mayonnaise
2 teaspoons Dijon mustard
1 teaspoon lemon zest
2 teaspoons lemon juice
1/2 teaspoon salt
1/4 teaspoon pepper
4 scallions, thinly sliced
1 long rib of celery, thinly sliced
2 tablespoons chopped parsley
2 cups lump crab meat
salad greens for serving
In a medium bowl, combine mayonnaise, mustard, lemon zest, lemon juice, salt, and pepper. Stir in scallions, celery, and parsley. Fold in the crab. Chill for at least 1 hour. Serve on a bed of greens. Serves 4 (so we had it twice…)
