When I featured our meals last summer here and here, people liked it. Here is a sample of our “winter” food; it’s seasonally different; this time of year we’re enjoying tangerines and comice pears instead of watermelon and berries! Here are our spicy stuffed portabella mushrooms, egg salad and avocado sandwich, lasagna, tofu stir-fry, taco style salad, tilapia soufflé, tomato soup, salmon burgers, tilapia with mushrooms or almond crusted tilapia, salmon with zucchini, butternut squash soup, Italian lentils with veggie sausage, tuna hash, and my first ever poached egg, with veggie sides, salad or fruit. Yum! All of it is fun to fix, delicious and nutritious to eat, and challenging to photograph! Enjoy!
