Many of us have long loved My Mom’s Baked Mac & Cheese recipe. Recently, I played with it a bit, and the result was over-the-moon terrific.
This is so sumptuously delicious it is hard to explain. It would be perfect to serve important company for lunch, or just for yourself on a random, low-energy, Tuesday evening. It is rich, packed with protein, and is superbly satisfying.
It is super simple to make, but requires a hands-off hour in the oven. It makes four servings. The leftovers warm up beautifully. It would be easy to double or triple for a crowd.
I made this from a pound of fancy Phillips lump crabmeat from Costco, with Trader Joes’s Unexpected Cheddar cheese.
Crab Mac & Cheese Recipe
1 cup of macaroni, boiled and drained
1 cup sharp cheese
2 eggs
2 cups of whole milk
1 teaspoon garlic powder
1 teaspoon salt
1 Tablespoon of fresh thyme leaves
1 pound of lump crab meat, drained and patted dry
Preheat the oven to 350ºF.
Slightly butter a baking dish (mine is 10″x10″).
In a large bowl, whisk the ingredients together, and pour into the baking dish.
Bake for one hour.
Serve immediately.
