Grain Free Blueberry Muffins (Recipe)

Grain free Blueberry muffin recipe

Sometimes you need something grain-free and this is a good option for you. They are easy to make, and are lighter and healthier for you than most sugar-laden muffins.

This recipe makes six muffins, which is just the right amount. They are good, too the next day, cut in half and warmed up in a pan with butter.

Grain Free Blueberry Muffins Recipe

3 eggs
2 cups almond flour
1/2 teaspoon baking soda
1/2 teaspoon sea salt
2 Tablespoons organic butter, melted
1 Tablespoon apple cider vinegar
2 teaspoons pur vanilla extract
2 Tablespoons maple syrup
1 cup fresh or frozen blueberries

Preheat the oven to 350ºF.

In a mixing bowl, mix together the eggs, butter, vanilla extract, apple cider vinegar, and maple syrup. Add the amond flour, baking soda, and sea salt to the mixing bowl and mix well. Then add the blueberries.

Grease a muffin tin lightly with butter. Spoon the batter in a muffin batter in and bake for about 20 minutes, until golden brown.

Yum! Enjoy!
