Flounder with Zucchini and Parmesan (Recipe)

Flounder is something that I don’t usually have, but it looked nice at Costco, so I gave it a try. I made this and we liked it, although this fish is too flaky to stay together for serving. I froze the rest to put into seafood chowder. Anyway, if you find yourself with flounder, give this a try. It is good, plus it is easy, using one pan, and comes together quickly.

The red onion here give it some needed texture, and flavor-wise, they mellow out in the oven.

This makes three servings, which the two of us ate when I made it, and then the last serving warmed up just fine as leftovers.

Flounder with Zucchini and Parmesan Recipe

1 lb of flounder fillets
1 large (two small) zucchinis (sliced in half moon shapes)
1 small red onion (sliced in half moon shapes)
4 cloves of garlic, minced
2 teaspoons of Italian seasoning
1/2 teaspoon of paprika
1/2 teaspoon cumin
juice of one lemon
1/4 cup extra virgin olive oil
1/2 cup Parmesan cheese, grated

Preheat the oven to 350ºF

Dry the flounder fillets between two dish towels, and season them with salt and pepper. Arrange them in an oven safe dish. Season the vegetables as well and add them in around the fish in the pan.

Make a sauce with olive oil, lemon, garlic, Italian seasoning, paprika, cumin, it mixing well. Pour it over the fish and vegetables in the pan.

Bake for 7 minutes, then remove from the oven and sprinkle with grated parmesan cheese. Bake for five more minutes until flounder is flaky and cheese has melted a bit.

Remove from oven and serve hot.
