This is so easy and is absolutely wonderful. It highlights the best of the season’s tomatoes in a glorious way. And the homemade dressing is fabulous!
Tomato, Corn, and Avocado Salad with Honey Lime Vinaigrette Recipe
For the salad:
1 pint of cherry or grape tomatoes, halved
2 ears fresh corn, cooked or steamed, and cut off the cob
1 avocado, chopped
8 fresh basil leaves, chopped
For the dressing:
1/4 cup fresh squeezed lime juice
1/4 cup olive oil
1 Tablespoon honey
1 garlic clove, pressed or finely minced
sea salt and freshly group pepper
Mix together the dressing. Mix together the salad ingredients, incorporating some of the dressing (you have enough a make more than one of these salads). Store leftover salad dressing in the refrigerator.
Serve immediately!
