Cider Sunflower Dressing Recipe

This is a lovely, light, slightly sweet dressing. It is watery because of the cider, so you don’t need much of it. It goes great with apples in the salad or in a salad next to something with a richer sauce, like my crab cakes, shown below. Unlike some of my intense dressings, this one is very mild, and just hints its presence.

If you don’t have cider on hand, you can substitute cider vinegar for good results too.

Cider Sunflower Dressing Recipe

1/4 cup apple cider
1 teaspoon fresh lemon juice
1/4 teaspoon tamari
1 teaspoon dijon mustard
2 teaspoons maple syrup
1 garlic clove
salt and pepper to taste
3/4 cup organic sunflower oil

Put the first seven ingredients in a food processor and whirl until creamy.

With the food processor going, drizzle in the sunflower oil slowly until it is all added. Whiz again to make sure it is all well combined.

Enjoy, and keep leftovers in the refrigerator.
