Recipe For Fresh Peas

I can’t remember when I last shelled fresh peas. It is not only fun but delicious. The photos below show the fun you miss buying frozen, but below that, you can see the terrific result we enjoyed with them in an outstanding salad. I made it in the spirit of something I read in a cookbook by the Barefoot Contessa. (But I think she used spinach and frozen peas…)

I combined the bowl of fresh peas with prepared pesto (the last bit in our freezer from last summer), pine nuts toasted on the stove for about five minutes in a dry non-stick pan on medium, a bit of Parmesan cheese, a pinch of salt, and then tossed it with baby romaine leaves. Boy, was it good! Everyone liked it. Try it and enjoy.
