Recipe: Traditional Eggplant Parmesan

best eggplant parmesan

I love a good eggplant parmesan, and this one blows the socks off of any I’ve ever had.

Today I had the privilege of dining with food blogger Julie Yates. She’s a friend and reader of my blog, but I’ve never eaten her food before. Wow! Her eggplant parmesan is out of this world and you can find it here on her blog, which is called Yates Yummies. I hope I can make it as well as she did, but her blog has lots of demonstration photos, which should help.

Below you can also see a photo of the dessert she fixed: angel food cake that was brushed with brown butter, brown sugar and cinnamon and then put on the grill to get warm, browned and crispy at the edges. Yummy indeed!
