This recipe is a spin off of mine from one I found on the inside of a Stouffer’s Corn Souffle box. I added the tilapia, as I am always looking for good ways to use this inexpensive, environmentally friendly protein source. I also exchanged their white rice for brown. These changes make it a completely different dish.
This is very nourishing, satisfying comfort food, warm and cozy and milk inducing. (It is very mild, so don’t let the presence of the chiles fool you.) It comes out rather loose; we usually serve it either with green salad or colorful fruit. It is also great warmed up as leftovers in a bowl for an instant meal. And it is very quick and easy to make! Try the recipe below and enjoy.
2 packages (12 oz each) STOUFFER’s frozen Corn Souffle, defrosted
3 tilapia loins, poached in water until cooked through
1 1/2 cups cooked brown rice
1 1/2 cups (6 oz) shredded Cheddar cheese (or a little more)
1 (or 2) 4 oz containers of diced green chilies, drained
1/2 teaspoon ground cumin
1/4 teaspoon garlic powder
1/4 teaspoon salt
Combine all above ingredients in a 2 quart microwave safe bowl and stir vigorously.
Heat uncovered on high power for 18 minutes in the microwave until mixture is set.
Serves six or eight.
