This is a yummy side dish that also sports fabulous color. See the photo below for what purple sweet potatoes look like. They are also called Japanese sweet potatoes. I buy them at my local organic produce store, however, you could do this recipe with regular sweet potatoes, with the same flavor profile, just a different look and less antioxidants.
This recipe comes from The Blue Zone Kitchen One Pot Meals Cookbook.
Note: you can swap out the coconut milk (which makes it vegan) for a milk of your preference.
This makes 2-4 servings depending on the size (photo above was served to two, below served to three).
Spiced Purple Sweet Potatoes with Oranges (Recipe)
For the sweet potatoes:
2 cups sweet potatoes, baked until very soft
1/4 cup coconut milk
2 Tablespoons olive oil
1 Tablespoon maple syrup
1/2 teaspoon fresh grated ginger
1/4 teaspoon vanilla extract
1/8 teaspoon salt
For the toppings:
1 Tablespoon walnuts
1 Tablespoon medjool dates
1 teaspoon of orange zest
Spice blend: 1/4 teaspoon each: cardamom, ground cloves, ground all-spice, ground cinnamon
1 orange, peeled and sliced
Put all the ingredients for the sweet potatoes in a medium bowl, and blend until smooth with a mixer (or a blender). Warm before serving. Top with toppings, and serve immediately.
Yum! Enjoy!
