Halibut with Saffron Tomatoes and Fennel (Recipe)

Halibut with Saffron Tomatoes and Fennel Recipe

This is quick and easy and good enough for company.

Halibut with Saffron Tomatoes and Fennel Recipe

1 large shallot, sliced
1 fennel bulb, sliced
4 garlic cloves, minced
2 Tablespoons butter
2 pints cherry tomatoes
Pinch of saffron threads
1/2 teaspoonsea salt
1/4 freshly ground pepper (1/4 teaspoon)
2 halibut filets (skin removed)

Melt the butter in a skillet and add the shallot, fennel, and garlic. Stir and cook until softened, about 4 minutes.

Add the tomatoes, saffron, salt and pepper. Cook and stir for 4 more minutes.

Add the fish filets, nestling them on top of the tomatoes. Season each one with salt and pepper. Reduce heat to medium low and cover. Let cook for 6-10 minutes until fish is opaque. (The timing will depend of the size of your filet and your stovetop.)

Divide between two plates and serve immediately.
