Tangy Tarragon Sauce Recipe

Happy St. Patrick’s Day!

This green sauce is delicious. I made it to put on fish, but you could put it on noodles, or add it to a stir fry. Whatever you put it on will go way up a notch in remarkable flavor!

Don’t be put off by the anchovies in this; besides the herbs, they are what makes this marvelous.

Tangy Tarragon Sauce Recipe

2 Tablespoons olive oil
zest and juice of 1 lemon
1/2 teaspoon apple cider vinegar
1 teaspoon almond butter
a pinch of sugar
freshly ground black pepper
5 anchovy fillets, finely chopped
1 Tablespoon of finely chopped tarragon leaves
1.5 Tablespoon finely chopped fresh flat leaf parsley leaves
1 clove of garlic, peeled and grated
sea salt (optional)

In a small bowl or food processor combine all the above ingredients and stir well. Add some salt if the anchovies are not salty enough, but likely they are, so you won’t need it.

Add to your fish, sandwich, stir fry, noodles, veggies, or whatever!

Yum! Enjoy!

Sounds really good. Have you tried anchovy paste instead of whole anchovy fillets?

Nope, but I’m sure it would be fine.
