Recipe: Cauliflower and Fish Chowder

This is perfect for a snowy day. Even our daughter had seconds!

Easy Fish Chowder Recipe with Cauliflower

1 tablespoon butter or olive oil
1 onion, peeled and finely chopped
2 celery stalks finely diced
2 1/2 cups vegetable stock
1 cup milk
1 small head of cauliflower, broken up into small florets with hardly any stem, or 1 package of cauliflower rice
2 or 3 large tilapia loins
3 tablespoons of half and half or cream
Salt and pepper
a large handful of chopped fresh parsley

Heat the oil or butter in a heavy bottomed pan over low to medium heat. Add the onions and celery and cook for a few minutes. Pour in the stock and the tilapia, and poach the tilapia until it flakes. Break apart the tilapia and stir it in to incorporate it. Add the milk and cauliflower. Simmer for 15 minutes. Add the half and half or cream shortly before serving. Season generously with salt and freshly ground pepper. Stir in the parsley and serve it up with some bread.

Serves four. Enjoy!
