This dessert is light and delicious and easy to make. It makes only two ramekins worth– two large servings, which we tend to share. If you have smaller ramekins, it could serve four. Plan on the chilling time overnight for it to set well.
Lemon Posset Recipe
1 + 1/4 cup cream
zest of one lemon
1/2 cup sugar
4 tablespoons of lemon juice
Mix the first three ingredients together in a double boiler and heat/scald the cream for about 10 minutes.
Remove from heat and add the lemon juice. Stir to incorporate.
Pour through a strainer into ramekins.
