I love this (more authentic) Caesar dressing of mine, but sometimes you want one that doesn’t have an egg or anchovies in it, even though it is delicious that way too. This dressing is really easy and relies pretty heavily on good parmesan.
This makes 2/3 cup. Store in the refrigerator.
Easy Caesar Dressing Recipe
1 small garlic clove
1/2 teaspoon mustard
1 Tablespoon fresh lemon juice
1/4 cup olive oil
2 tablespoons avocado mayonaisse
3 Tablespoons Parmesan cheese
sea salt, and freshly ground black pepper (to taste)
In a blender or food processor, puree the garlic, mustard, lemon juice, vinegar, olive oil and mayonnaise until smooth. Add the Parmesan and give it a few pulses just to incorporate the cheese. Season with sea salt and freshly ground pepper.
