I made this treat for my husband today… “Winter Greens with Egg Salad” from my new cookbook Simply Organic by Jesse Ziff Cool. This is the second time I’ve made it and he’s raved about it both times.
It is a little too much chewing for my taste, so once a month is enough! I got the organic Dandelion greens at my local organic store and it amuses us to imagine someone carefully nurturing and farming what my husband wages war on in his lawn.
