My Mandoline Gratin

I used the new mandoline I got for Christmas to make this lovely and delicious dish.   The recipe is from the beautiful cookbook Simply Organic by Jesse Ziff Cool.  She calls it Autumn Vegetable Casserole.  It has thin slices of butternut squash, fennel, onion and potato in it. 

My mandoline is not as yet a labor saving device, and there was some unfortunate waste of the veggies at the ends of pieces that would not go through, and would have to be used elsewhere.  (It worked best for the potato and least satisfactorily for the onion.)  Despite all this, it was fun and a very successful effort.
